Lemon tea cake- recipe:
Ingredients:
pastry: Lemon filling:
- 1 cup of self- raising flour - 1/4 cup of lemon juice
- 1/2 cup of caster sugar -1/2 cup of caster sugar
- 60g butter, chopped - 1 egg lightly beaten
- 1 egg, lightly beaten - 60g butter chopped
- 1/2 cup of caster sugar -1/2 cup of caster sugar
- 60g butter, chopped - 1 egg lightly beaten
- 1 egg, lightly beaten - 60g butter chopped
Method:
pastry:
1. preheat oven to 180 degrees Celsius. Grease round pan with oil and then line with baking paper.
2. Sift 1 cup of flour and add into a medium bowl along with 1/2 cup of caster sugar and 60g butter.
3. Rub flour, sugar and butter between your fingertips until breadcrumbs form.
4. Add 1 lightly beaten egg into mixture and stir until dough forms.
5. Separate the dough into 2 parts, 1/3 and 2/3.
6. Press dough into the base of a round pan, do not put dough up the sides. (dough is supposed to be wet so therefore wetting finger tips may help to spread dough onto the base)

1. In a small pot over low heat combine 1/4 cup of lemon juice, 1/2 cup of caster sugar, 1 lightly beaten egg and 60g of butter.
2. Once butter has melted and sugar has dissolved let the mixture boil. once the mixture boils stir again and repeat letting the mixture boil and then stirring again until the mixture thickens and coats the back of the spoon.
3. Pour the hot lemon curd into the round pan over the dough base.
4. Crumble the remaining 1/3 of the dough mixture over the lemon curd.
5. Bake for 30 minutes or until golden brown.
6. Dust with icing sugar and serve.
